Photo Finale allows you to convert color photos to black-and-white images.  To use this feature, select Effects from the Photo menu and then select Black and White.

 

Here is a sample of what a photo looks like with the Black and White Effect used:

If you don’t like the way that your photo looks in black and white, select Undo Convert to Black and White from the Edit menu.
